Yummy Recipe!

I have an excellent recipe to share with you! Lisa, a 36 year-old 5th grade teacher at ASFC, is a health nut vegetarian (and yoga aficionado) with either an allergy to processed sugar and/or a difficulty processing it as it’s been drastically cut out of her diet. She recommended the following recipe using all fresh, fantastic ingredients that I can pick up here at the local market, but that you can also find at home at the local grocery store.

Ingredients:
2 Mangos
2 Avocados
4 Roma tomatoes
1 Jicama (the “j” is pronounced like an “h” – looks like a large potato)
2 Jalapenos
2 Limes
Cilantro

Cut up all ingredients in bite size pieces and place in a bowl. Squirt the juice from the limes over the mixture and place it in the fridge for the juices to mingle together. Enjoy! It’s delicious and refreshing – prefect for summer! If you’d like, throw in a papaya, as well – they’re great for digestion.
